While this may seem to be a strange addition to a list of recommended books that addresses agriculture, before students can understand food safety they must understand microbes and illness. Hence, this recommendation is made. This is a basic book that explains that germs cause illness and we are surrounded by them. Basic sanitation is covered along with some simple explanations of microorganisms, transmission, the body's immune system and rules for good health. With food safety issues facing agriculture (E. coli contamination), possible pandemics (bird flu), and bioterrorism (anthrax), this is an issue that every citizen needs to understand.
